Her recipe video is so, so easy to follow, the steps were so clear, and I felt like I knew what I was doing the whole time.
I always get nervous around flour/dough/baking so Iβm SO happy these came out perfect! β£

β’Prep your dough first before cooking your beefβ£ filling. You want the dough to cool in the fridge while the filling is being prepared.
β’You can prepare the dough ingredients in a standing mixer or blender. Once itβs combined well and sticking into a ball, you can begin kneading it with your hands. β£
β’When cooking your ground beef, use broth to keep it from drying out. Do not let the broth evaporate completely, you want your beef moist so it doesnβt dry out while cooking in the oven. β£

1.5 cups whole wheat flour β£(or all-purpose)
1/4 cup ice-cold waterβ£
2 hefty tablespoons of shortening β£
1/4 cup cold salted butter β£
1 tsp apple cider vinegarβ£
2 tbsp curry powderβ£
1 tsp sugar β£
1 1/2 tsp saltβ£
1 egg + 1 tbsp water for an egg wash β£

80/20 lean ground beef β£
olive oil for cookingβ£
1 cup broth (I prepare my own with a Maggi cube, water, and other spices)β£
1 tbsp garlic β£
1/4 cup diced onion β£
1 tbsp paprika
salt and pepper
Optional: curry powder, jerk seasoning or sauce, cajun seasoning blend, taco seasoning, sofrito, etc.

Step 1: Preheat oven to 375 degrees. Add contents for pastry crust to a standing mixer or even your smoothie blender. I used my Ninja until the ingredients were sticking to each other and not much flour was visible.
Step 2: Empty the flour on to a lightly floured surface and roll out dough using a dough roller or a wine bottle, like I did. You should get a pretty large, flat pastry crust.
Step 3: Cut, using a knife or mason jar lid, large circles in the dough. This will be the size of your beef patties. Your dough should make 4 patties. Place the 4 patty crusts on parchment paper on a baking sheet. Place in fridge while you cook your filling.
Step 4: Heat a skillet with 2 tbsp oil. Add chopped onion and garlic to the hot oil. Once onions and garlic become more fragrant and slightly transclucent, add your beef to the skillet. Cook beef until it begins to brown, then add spice mix.
Step 5: Pour in the broth and let the meat filling simmer for 5 minutes, stirring occasionally to spread the seasonings. After another 5 minutes when the meat is fully brown and cooked, set aside and let cool.
Step 6: Remove pastry crust from fridge and begin constructing your patties. Add about 2-3 tablespoons of filling on to crust. Make sure not to overfill your patties so they don't break when trying to fold.
Step 7: Prepare egg wash. Carefully fold each patty closed and using a fork, pinch the ends to seal them shut. Using your egg wash (1 egg + 1 tbsp water) and lightly brush a layer over the closed patties. This will help the cook and crisp.
Step 8: Bake patties for 35 minutes until golden and hard.
Serve with leftover rice and beans! (made in the crockpot π)
