Painterland Sisters Protein Pancakes with Strawberry Sauce




I love using the Painterland Sisters Plain Skyr Yogurt in my breakfast pancakes. I make pancakes every single Sunday and I have been using this method for a little over a month and I have not looked back.


I think it's the billions of probiotics and the ultra-filtration that this milk goes through that allows it to help your baked goods puff up. Even while stirring the batter, if I leave it for a few moments I notice it starts to resemble an active sourdough starter! It looks really bubbly and smooth.


This pancake recipe is so easy. After you make it a few times it will start to become second nature.


INGREDIENTS for Pancakes

  • 1 2/4 cup of all purpose flour

  • 2 tsp of baking powder

  • sugar (add as much or as little as you want, I don't measure sugar)

  • 3 tbps melted butter

  • 1/4 cup of milk


INGREDIENTS for Strawberry Sauce

  • 1/2-1 cup of frozen strawberries

  • honey or brown sugar

  • 1/4 cup of water




 

FOR THE PANCAKES, mix all the dry ingredients first. Add your milk, melt your butter, and add your yogurt. And stir. The mixture will become sticky like sourdough and will be smoother than normal pancake batter which is still lumpy.


Add butter to your frying pan/skillet. Once it is hot spoon your batter on to the pan. I like for my pan to be really hot and for my cakes to have burnt edges and a little crispy color.


Once you see bubbles you can flip your pancake and cook the other side.


FOR THE STRAWBERRY SAUCE, turn on the sauce pot. Add the water and strawberries and let them come to a subtle boil. If all the liquid boils out too quickly just add a little more and stir consistently. Add your sugar or honey and stir. The key is to keep stirring until the mixture has thickened. I've used this method with other frozen fruits like peaches! It's a delicious way to make syrup toppings at home!


I top my pancakes with a spoonful of plain yogurt for that added flavor of nutrients and spoon my fruit syrups over the yogurt pancakes. Pour a cup of coffee and enjoy!
