Banana Muffins: Vegan, Whole Wheat, Dairy-Free, Eggless, 20 minutes

INGREDIENTS


2 bananas

1 cup nut milk

2 cups whole wheat flour

1 teaspoon baking soda

1 teaspoon salt

4 tbsp sugar (to taste)

1 teaspoon cinnamon

2 teaspoons Vanilla Extract

1 flax egg

2 tbsp Better Body Foods Avocado Oil



INSTRUCTIONS:


Preheat oven to 350 degrees F. Mix 1 tbsp flax seeds and 3 tbsp water in a small bowl and set aside. Combine flour, baking soda, salt, and cinnamon in a medium bowl.


Mash together bananas and 1 cup  milk in a large bowl. Mix by hand or by blender. Beat in flax "egg", brown sugar, and 2 tbsp oil.


Mix dry ingredients with the banana "egg" mix until a wet batter forms. Make sure all dry ingredients are mixed in completely.


Pour into greased muffin sheet and bake 20 minutes. Let cool in pan for 5 minutes. Remove and serve.
